Today’s Cinefamily members only show involved a potluck where we had to bring in a dish… after some consideration, I ended up bringing this filipino rice cake called Bibingka.
The cake is similar to this recipe, more or less. It’s essentially a rice flour based cake whose flavor mostly comes from coconut and condensed milk. Throughout the cake are sweetened coconut bits called macapuno (it’s amazing as an ice cream topping). The end result is a moist and mildly sweet cake with the texture of corn bread.
